As a business owner or food handler, you have a duty to comply with the provisions of Regulation (EC) 852/2004 of the European Parliament on the Hygiene of Foodstuffs, the Food Safety Act 1990, and Food Hygiene (England) Regulations 2005. This requires food businesses to ensure that any staff working with food in a retail environment are supervised, instructed and trained in food hygiene and food safety in a way that is appropriate to the work they do.

Upon completion of the training learners will have an understanding of a wide range of key food safety issues, including the three main types of food safety hazard, their sources and methods of control. Learners will know the correct temperatures needed for storage, display and sale, understand the correct handling of food and be aware of common food pests and how to control them, along with the principles of cleaning and disinfection and how these apply to the workplace.

  • An introduction to Food Safety and Hygiene – Food Safety and Hygiene are terms commonly used, here we will look at how they relate to food that has been prepared and served.
  • Impact of Food-Borne Illness – Looking at what food-bourne illnesses are and how they affect us.
  • Understanding Food Law – Food often has a long journey from growing, harvesting, delivery, preparation through to being eaten. As a result there are many opportunities for it to become contaminated. In this section we look at legislation in place that relates to food hygiene and safety.
  • Food Safety Hazards and Contamination – Exploring food safety hazards and how they arise and consider how they can be prevented and controlled.
  • Food Preservation, Storage and Temperature Control – How to preserve food, including appropriate storage and temperature controls.
  • Personal Hygiene – This section looks at why personal hygiene is so important when working with food – from hand washing to legal requirements.
  • Hygienic Premises and Equipment – This section looks at good housekeeping and the part premises and equipment design play in maintaining clean, pest-free conditions.
  • Hazards Analysis and Critical Control Point (HACCP) – It is a requirement of food hygiene regulations that all businesses who sell food must have a documented food safety management system based on HACCP in place. This section looks at what this involves.

Accreditation

This course is accredited by City and Guilds and the certificate, awarded upon successful completion, includes an authorisation seal.

Course duration

Approximately two to three hours to complete. As an e-learning course learners can complete this training in convenient stages. The system will record progress throughout.

Test and certificate

The end of course test consists of 30 multiple choice questions. Learners are required to achieve a 75% pass mark, and, if necessary, may attempt the test three times at no extra cost.

The course consists of a series of pages in which an instructor will talk learners through the lesson material. How long is a Level 2 certificate valid for?

There is no set time for how long a certificate is valid for. It is generally industry recognised that food hygiene certificates are renewed every three years. However, some employers may require you to renew your certification every year.

What is the difference between Level 1, 2 and 3 Food Safety and Hygiene?

An introductory, or Level 1 course will give you the necessary understanding of preparing food at home but is unfortunately not suitable for working directly in a food environment.

A Level 2 Food course meets the UK training requirements for food handlers to undertake appropriate food safety training.

A Level 3 Food Safety and Hygiene course is suitable for those who are responsible for the supervision of other members of staff who are handling, preparing or storing food across manufacturing, catering and retail industries.
