Expert: Don't let food hygiene standards slip over festive break

schedule 24th December 2010 by Virtual College in Food and Drink Last updated on 7th July 2016

With just one day to go until Christmas one expert has advised people not to get caught up in the excitement and overlook food hygiene.

Food safety specialist from Penn State University Martin Bucknavage said cooking meals for large numbers of people can lead to lapses in concentration when it comes to food hygiene.

He advised individuals who are having friends and family over for dinner to ensure they plan and prepare in advance.

"If we wait until the last minute, a forgotten ingredient or an overstocked refrigerator can result in some major confusion and possibly some contaminated food," Mr Bucknavage added.

A thermometer is an essential item in the kitchen, as it will let people know whether provisions are cooked properly, this is especially important when meat is on the menu, he explained.

Elsewhere, food hygiene training appears to be important to one pub in West Somerset, as according to the County Gazette, it was recently awarded top marks in a new assessment initiative.
